Have You Tried Zucchini Pasta yet?
Bathing suit season may be over but the holidays are coming up faster than you can say “carb,” so it’s time for healthy eating.
One of my favorite seasonal vegetables is zucchini.
Take advantage of the delicious antioxidant and trade in processed food for a serving of vegetables. The biggest benefit is definitely how simple the recipe is.
Cut off the tips of each zucchini and use either a Julienne Slicer or a Spiralizer to create the zucchini noodles.
If you don’t feel like investing in either, then slice with a regular vegetable peeler and cut those strips into thinner pieces.
Sauté the noodles by adding your favorite oil to a large skillet (make sure the oil covers the entire bottom of the pan) and add the zucchini noodles. Zu-oodles? Zoodles!
Stir frequently, and only allow sautéing for 5-7 minutes.
This keeps them tender yet crispier than they would be with boiling or microwaving
(microwaving? And we thought we were lazy!).
Since zucchini itself is not rich in flavor, you can add your favorite spaghetti sauce or seasoning to spice up your dish.
