Tangy Buffalo Cauliflower Bites

Buffalo Cauliflower Bites are a new twist on wings that gets veggies in your tummy without sacrificing that delicious buffalo flavor. Some taste-testers even prefer this healthy alternative. Why should I consider cauliflower, the Justin Beiber of vegetables, you ask? Well for one, one cup of cauliflower has 25 calories versus the whopping 250 calories per cup of chicken. One serving of cauliflower contains 77% of the recommended daily Vitamin C we need in our diet, and let’s face it- we never eat just one serving.
It’s packed with antioxidants, vitamins and minerals, and loads of anti-inflammatory nutrients.

Ingredients:
1 head of cauliflower
(For the batter)
½ cup all purpose flour
½ cup water
Dash of Frank’s Original Hot Sauce
¼ teaspoon garlic salt
¼ teaspoon dried onion
(For the buffalo sauce)
¼ cup Frank’s Wing Sauce
3 Tablespoons melted butter, salted
Preheat the oven to 450 degrees.
On a thin metal tray, line a baking sheetwith tin foil. Use cooking spray, (I recommend Pam Original No-Stick) and starton the cauliflower.
Wash the head of cauliflower and cut theminto pieces. Remember, these pieces will essentially be your “boneless wings”so the size and shape is up to you! Set aside.
In a medium bowl, mix the flour, water,garlic salt, and dried onion. Add a dash of Frank’s Original Hot Sauce.
5. Start dipping each piece of cauliflower into the batter until completely coated, and place it onto the baking sheet. Bake for 15 minutes, or until the batter hardens.
6. While the cauliflower is baking, mix together Frank’s Wing Sauce and the melted butter to make your buffalo sauce.
7. Once the batter hardens, remove the tray from the oven and dip each piece into the buffalo sauce, coating them completely. Let cook for 5-7 more minutes until the sauce looks semi-dry.
8. Let cool and enjoy your new guilty pleasure without the guilt!
