One-Pan” Lemon Garlic Chicken Pasta

If a recipe includes “One-Pan” in the name…

you can bet your bottom dollar that we’re going to try it.
More & more you’ll appreciate the simple things in life.

This is why I was obligated to try this One-Pan Lemon Garlic Chicken Pasta recipe. This recipe came from Tip Hero, which much like Tasty… seeks to supply terrible cooks, lazy millennials, and all those who recently found the value of simplicity, with fast and easy recipes.

For this one you’ll need:

1 (that’s right just 1) Pan
2 Tbs extra virgin olive oil
1 pound boneless skinless chicken breast, cut into 1 inch pieces
1 Tsp. kosher salt and ground pepper
4 Cloves of minced garlic
2 Cups of low-sodium chicken stock
1 Cup of water
1/2 pound of penne pasta
1 lemon, to be juiced
1 Cup of freshly shredded parmesan cheese
1 Cup of fresh basil
1 Cup of snap peas

The first thing you’ll want to do is slice up all of your chicken. It’s best to cut them in long, skinny strips that are about an inch thick. Once the chicken is sliced, place it in the pan, which should already have the EVOO simmering. Next, season the chicken with salt and pepper. Cook at medium temperature until the chicken is browned.

Once the chicken has browned, add garlic and sauté with the chicken until the garlic has also browned (keep a close eye on it so that it doesn’t burn though, because it can go from browned to burnt quickly!) Once you’ve achieved complete brown-age, add chicken stock, water, and pasta. Bring the pan to a boil once you’ve reached this step, so that the pasta can cook thoroughly along with the other ingredients. Let this stage last about 15 minutes, stirring occasionally to prevent sticking.

After 15 minutes, the liquid in the pan should reduce to about half of what it was. If need be, let everything sit longer until the liquid has halfway diminished from where you started. Once it’s reduced, squeeze the full lemon into the mix. After the lemon juice has seeped in, add the fresh parmesan and basil. If you’re feeling really fancy with your big chef pants on, you can even cut some lemon to be used as a garnish. #Fancy.
